summer berry crisp
Crisp? or crumble ? What is this exactly? Delicious, I think. It’s a grain free dessert which is perfect for summer. We had this last night after dinner and it wasn’t too heavy considering the summer heat. I considered adding in some additional summer fruits but in the end settled for strawberries and blackberries – if you call that settling – and it was wonderful. It took mere minutes to prepare. I see no reason why you couldn’t substitute any summer fruit for this recipe. Peaches would be fantastic. And heading into fall, apples would be equally delicious, especially with the cinnamon. We didn’t top ours with ice cream this time but vanilla ice cream would surely take this to a totally new level.
preheat the oven to 425 degrees
place
2 cups organic strawberries, hulled and roughly chopped
2 cups organic blackberries
in a shallow lidded saucepan. Simmer over medium heat for 6-8 minutes until they soften and render a small amount of syrup.
transfer them to a oven-proof baking dish (8 inch square or similar size dish).
In a separate bowl combine
1 cup ground blanched almonds
1/3 cup coconut sugar
1 tsp ground cinnamon
sprinkle the sugar/almond mixture over the berries trying to disperse as evenly as possible.
bake for 15 minutes. Top will be slightly browned. Serve immediately or at room temperature.
